GREAT FOOD WITH MCCORMICK AND IMUSA ~ HISPANIC HERITAGE MONTH


When I was asked by IMUSA and McCormick Spices to create a dish in honor of Hispanic Heritage Month, I was thrilled to oblige!  I think most of us can agree that a great Mexican meal is high up on the list of great things, so I chose to try my hand at Southwest/Mexican! After all, my lifelong friend and former nanny to my children is Hispanic American, and this great lady taught me a thing or two about cooking!

Below are my own recipes, created by me, using McCormick spices and IMUSA's Lava Rock Molcajete, Tortilla Warmer, and Salsa Bowls.  ENJOY!


STEAK FAJITAS

SERVES 2

Ingredients

I pound of good sirloin steak, at least an inch thick
1 bell pepper, cut into slices
1 purple onion, cut into slices

Marinade for steak

1/2 teaspoon of McCormick Mexican Oregano
1/2 teaspoon of McCormick Chili Powder
3/4 teaspoon McCormick Cilantro Leaves
1/2 teaspoon McCormick Cumin
1/2 teaspoon of McCormick Garlic Salt
1/2 teaspoon of McCormick Black Pepper
1/4 cup Canola Oil

Mix these ingredients in a ziplock freezer bag and add steak.  I marinated for 2 hours.


To cook, put steak in oiled grill pan, (I used an iron grill pan) but I would not use the outdoor grill. 


Cook to your preferred doneness.  Remove steak from pan and let rest.  While steak is resting, sauté onions and bell peppers.  

Warm tortillas in IMUSA'a Tortilla Warmer

Slice meat.  Combine steak, onion and bell pepper strips, and sour cream if desired onto a warm flour tortilla.

I will tell you that you will never eat fajitas any other way again!  Great marinade for any steak too!

I would also like to share my salsa recipe, which I use for dip and on so many dishes.  This is also great to garnish omelets with.

SALSA

1 large tomato
1 medium onion
1 can Rotel diced tomatoes and peppers
1 teaspoon McCormick Cilantro Leaves
i clove garlic
Jalapeno and salt to taste. 
Serve in IMUSA's Salsa Bowls.


I mash my garlic and tomatoes in the IMUSA’s Lava Rock Molcajete, add Rotel and mash a little more.  Add desired amount of salt and jalapenos. Note: There is heat in the Rotel tomatoes, so taste first.

TACOS


1 lb. ground beef
I packet of McCormick Taco Recipe Mix
Follow package directions

I added Romaine Lettuce
Green Onion
Homemade Salsa
Sour Cream if desired

RICE
1 package Mexican Rice Mix
1/2 cup Chopped Onion
2 1/4 cup Water or more

When I cook rice, I add 1/2 cup of chopped onion, rice mix, and 2 tablespoons of oil.
I lightly brown the onion and rice, then add the water.  This method will use more water than the package suggestion of 2 1/4, and I do not cover. You be the judge.

Looks delicious, Teresa! Carnivor me would love it, and I'm wondering if I could figure out a tofu version for vegetarian Mr. H. Yum! XO

YUM! They chose the right chefista! My family loves fajitas {and I love those iron pans, make a moister steak.
