FITNESS, RECIPE, AND TOPS

It has been a busy week for me.  I am not taking measurements until next week because everything is moving around a lot right now.  You know what I am talking about.  To see the past three posts on fitness, visit here, here, and here.

I have lost 3 lbs!  I could have lost more, but as I said earlier, I am on a healthy diet and just don't want to worry about a strict diet while I am adjusting to these strenuous workouts.  I am taking Emily's (Splendid Market) advice and getting a fitbit, which I think will help.

CHILI-RUBBED FLANK STEAK WITH WATERMELON-JICAMA SALAD

Serves 4

1 1-pound flank steak, trimmed
1 2/2 teaspoon chili powder
1 teaspoon kosher salt
½ teaspoon black pepper
1 tablespoon canola oil
1 ½ pounds watermelon
cut into ¾-inchpieces (4 cups)
¾ pound jicama, peeled and cut into ½-inch pieces (2 cups)
1 shallot, thinly sliced
2 teaspoons finely grated peeled ginger
1 teaspoon lime zest
2 tablespoons fresh lime juice
1/3 cup fresh cilantro (optional)
¼ cup fresh basil (optional)

Pat steak dry with paper towels .  Sprinkle both sides with chili powder, salt, and pepper.  Drizzle oil over both sides and lightly rub in with fingertips to coat.

Heat the grill to medium high or a grill pan over medium high heat.  (If using a grill, clean and oil grates first.) Grill steak, flipping once 8-10 minutes for medium or until desired degree of doneness.  Transfer steak to  cutting board, lightly tent with foil and let rest 10 minutes.

Meanwhile, in a large bowl, combine watermelon, jicama, shallot, ginger, lime zest and lime juice.

Thinly slice steak across the grain.  Serve with salad; garnish with cilantro and basil if desired.

 I love this steak on a tossed salad too.  Wonderful.

Can't wait to check out your previous posts! So sorry I've been so lax in my reading abilities or just keeping up with life abilities! This recipe looks divine! You don't need to lose weight but I know how it makes me feel so much better to "work out"! Here's to both of us! I want this to be a lifestyle for me from now on…and I'm sure you do as well. It sure is hard though to fit it all in! Great post, Teresa!
