ROCO MAGAZINE

All of you know that I am always on the lookout for a great new online magazine. Well I have found ROCO Magazine, and it was love at first sight!  Not only does the magazine publish the work of some of our favorite designers, there are plenty of entertaining ideas and great advertising.

ORIENTAL SALAD


YOU WILL LOVE THIS!  I HAVE TWEAKED THE RECIPE OVER TIME.

1/3 cup apple cider vinegar 
1/4 cup vegetable oil 
1/2 cup sugar 
2 (3 ounce) packages chicken-flavored ramen noodles, noodles crushed 
1 (1 lb) bag coleslaw mix 

Directions:  

For the dressing, combine vinegar, vegetable oil, sugar and the two flavor packets from the ramen noodles, set aside.  

In a large bowl combine cole slaw mix and dressing, and let it sit in refrigerator for 2 hours.

I combine 3/4 cup almonds (can use cashews or peanuts) and ramen noodles, sautéing in a small amount of butter until almost brown.  Drain on paper towel and add to slaw mixture.  You can also add toasted sesame seeds is desired.  Add to slaw and serve! 

Note: I add a can of mandarin oranges to my slaw.

I also love to serve sliced grilled chicken breast atop the salad for a meal.It is also great with shrimp cooked in chili sauce.
