Southwest Shrimp Tacos

I am in the midst of taking exams this week, but I wanted to post this recipe, found in this month's Southern Living magazine. They are scumptious!

ENJOY!

Southwest Shrimp Tacos


10 to 12 (10 inch) wooden skewers

2 lbs. unpeeled, large raw shrimp (21/25 count)

Vegetable cooking spray

2 Tbsp. hot sauce

1 Tbsp. olive oil

1 ½ tsp. ancho chile powder

1 ½ tsp. ground cumin

¾ tsp. salt

16 to 20 (8-inch) soft taco size corn or flour tortillas

3 cups shredded cabbage

1 cup grated carrots

Lime wedges

Soak skewers in water 20 minutes. Meanwhile, peel shrimp; devein, if desired. Coat cold cooking grate of grill with cooking spray, and place on grill. Preheat grill to 350 to 400 degrees (medium-high)
Toss shrimp with hot sauce and next 4 ingredients. Thread shrimp onto skewers. Grill shrimp, covered with grill lid, 1 to 2 minutes on each side or just until shrimp turns pink. Grill tortillas on each side until warmed. Combine cabbage and carrots. Remove shrimp from skewers before seving. Serve shrimp in warm tortillas with cabbage mixture and lime wedges.

Cameron Diaz ~ Soaring

Cameron Diaz, at age 37, is having the best time of her life. She is starring in three Movies – Knight and Day, The Green Hornet, and Bad Teacher. She works out five days a week to build her body because she may become skinny if she doesn’t! Oh, those days.

Diaz detests the internet and Twitter, and just barely returns emails. Her telecommunication tool is an iPad. She couldn’t care less what the media says about her, and believes in living life to the fullest. Losing her father, who died at 58, has helped Cameron realize what is important in life.

This photo shoot, in this month’s Harper’s Bazaar, shows this beautiful, funny actress conquering New York. ENJOY!

Looks Familiar

This looks like my room after painting. Well, maybe not anywhere nearly as cluttered as this, but it nonetheless looks warm.

I am taking a sculpture class this semester, and having thoroughly enjoyed this time, I am ready to clean everything up and enjoy the fruits of my labor. I am usually a clean freak, but in my one place to be creative, I feel safe among the disaster while involved in a project.

It always amazes me how beautiful the colors are and how well they complement each other on the easel and the surrounding area. This photograph reminded me of my space, and the reality that it needs a good organizational and cleaning session.  So... off I go.

IN GRAND STYLE

This beautiful home, a Georgian Revival estate named Cherryfield , is located in New Jersey. The home was acquired by the new owners through a house swap. Sister Parish and Albert Hadley had decorated the home in 1963, so the owners were satisfied with a minor renovation.
